How to Correctly Preserve the Top Tier of Your Wedding Cake for Your First Anniversary

Savour the flavour and honour an age-old tradition in the right way – from your wedding day right the way through to your first anniversary together. We’ve put together the ultimate cake-saving guide to help you and your partner take a trip down memory lane on the first big day since your wedding exactly one year ago.

1. Keep Things Under Wraps:

Appoint a ‘cake captain’ (unless you are prepared to do this all yourself) to take the cake home after the reception.

Whoever is tasked with this should then do the following as soon as possible:

  • Remove any sugar decor (the condensation from your freezer will ruin them!)
  • It’s always best to chill the cake for at least 2 hours (or overnight, but be aware that as the cake cools it will accumulate moisture which will dry as it freezes) to allow the icing and filling to stiffen up. This will prevent anything sticking in the next step.
  • Wrap the cake tightly in plastic wrap only – foil will cause freezer burn. 3-4 layers should be enough.
  • If possible, place the wrapped cake in an airtight bag or container.
  • Snag a piece of ribbon or lace from somewhere around the wedding to keep with the cake so that you don’t forget about it.

2. Know Your Cake

Some cakes freeze better than others- that’s just the way the cookie (or, in this case, cake) crumbles.

Cakes with more moisture in the bake will freeze better and store for longer (do not confuse this with storing a cake in the fridge, as in this instance the moisture is something present already in the cake); think flavours like carrot cake or chocolate cake.

Plain sponges or cream-filled cakes have a slight tendency to spoil in the freezer if not stored correctly, but with a little extra care and attention can keep for just as long as any other kind.

Be careful of any fruit fillings (not jams or spreads) as the high water content in berries, for example, can transfer ice crystals to the cake which will cause soggy spots while thawing.

3. Consider a Copycat Cake

It is worth noting that no cake will taste as good as it did on the day after a year in the freezer.

Many couples nowadays are forgoing the tradition and will order a replica of their top-tier.
